The next step is caramelizing some brown sugar until it turns liquid, then mixing in the rice flour — or a blend of rice and mung flour — until the mixture has a smooth, homogeneous texture. Once that’s ready, take a small portion of the mix and either flatten it thin or flatten it first and cut it into pieces. Both methods work fine.
