Did spinach change or did we?
When I was a kid, spinach for dinner was not a celebration. We were “told” to eat our spinach if we wanted to grow up to be strong like Popeye the Sailor. The image of spinach was this slimy, green goo that plopped out of a can.
Today’s spinach has an updated image. It’s still promoted as healthy but a dollop of green sludge has been replaced with images of lovely, green leafage.
Consequently, it has become a popular choice as a salad base and the delectable recipes incorporating spinach are galore.
